When I recently bought the book Martha Stewart’s Cupcakes I picked up two so that I could use one for my first giveaway on this blog. And I’m so glad I did–I love this cookbook! I’ve read it from cover to cover. The only downside for me is that there is only one recipe that doesn’t use dairy or eggs. But there are so many ideas and gorgeous pictures that I don’t mind. Inspirations galore.

Oh I forgot my favourite cupcake flavour…this possibly isn’t strictly a flavour, or possibly a cupcake but I think it works with cupcakes…my gran used to slice the top off, add a generous dollop of butter cream, a little dollop of jam and then cut the slice in half, placing each half back on like butterfly wings to make butterfly cakes

My favorite flavor is ANY flavor…..baked goodies are my weakness and it’s hard because both my daugther (6) and I love to bake, so we bake for other people!

Super Moist French Vanilla is my favorite flavor. Cupcakes are always a must around here for birthdays and any other special occasion. Much easier than baking a cake and decorating it. Would love to win this great book.

I love velvet cupcakes (red velvet cake without the red food coloring) with either a butter cream or milk chocolate frosting. Yummy!
Also as an egg substitute in a cupcake, you can use tofu. I believe a quarter cup tofu (beaten) per egg (if a recipe calls for more than one egg add some baking powder to tofu). I have made a few cakes using tofu and no one was the wiser. If you like coconut, coconut cream (for a heavier consistency) or milk can replace dairy.
