This is my mom’s yummy pumpkin cookie recipe, a classic growing up. She made them for us every fall.
Ingredients:
1 1/2 cups sugar
1/2 cup shortening (or butter)
1 egg
1 t vanilla
1 cup canned pumpkin
2 cups flour
1/2 t salt
1 t baking soda
1 t baking powder
1 t cinnamon
1 cup chocolate chips
Directions:
Preheat oven to 350 degrees. Using a stand mixer with the paddle attachment, cream the sugar and shortening for 3-4 minutes. Mix in the egg, vanilla and pumpkin. In another bowl whisk together the flour, salt, baking soda, baking powder and cinnamon. Add flour mixture to the pumpkin mixture. Mix just until combined. With a spoon, stir in the chocolate chips. Drop spoonfuls onto a cookie sheet and bake for 10-15 minutes.

Oh, yum! These sound delicious! I have a cute pumpkin shaped cookie cutter, so I will have to make a batch of these using it!

I can’t wait to try these! My daughter loves pumpkin, and I just made pumpkin/chocolate chip muffins last weekend. I have canned pumpkin leftover, and this recipe will be perfect!!!

Made them today! They were really tasty and we loved the flavor. They weren’t as pretty as yours or circular though. Maybe we overmixed!

I made these and they were very good but I didn’t really taste much pumpkin. I sprinkled some pumpkin pie spice on top to get that flavor. I’m thinking next time I’ll either put the spice in the batter OR use pumpkin pie filling instead of plain pumpkin. Thoughts?
