Eden Passante from Sugar & Charm is my guest contributor this week and today she has some tricks & treats for making a fun and easy Halloween breakfast. Give an extra special treat to your kids on Halloween day and add some pumpkin to those pancakes! Using pancake molds such as pumpkins or bats to shape the Halloween pancakes will be an extra bonus and so much fun to eat. If you don’t have any molds you can try these shapes freehand. The easiest way to fill the molds is to put the batter into a ziplock bag with the corner trimmed (like using a frosting bag). Carefully pour the batter into the mold. There’s a Pumpkin Pancake recipe below.

Pumpkin Pancakes

1 cup flour
2 Tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2/3 cup pumpkin puree
1/3 cup milk
2 Tablespoons butter, melted
1 large egg
1 Tablespoon vegetable oil

Directions: In a small bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Set aside. In a medium bowl, whisk together the pumpkin puree, milk, butter, and egg. Add dry ingredients to the pumpkin mixture. Whisk until just moistened, but don’t over mix–a few lumps are okay. Cook on a heated skillet rubbed with the oil until the surface of the pancake has some bubbles and a few have burst, 1-2 minutes. Then flip and cook on the other side. If you are using the pancake molds, fill a 1 gallon ziploc bag with the batter. Oil the pancake molds and place onto the hot skillet. Snip a small hole in one of the bottom corners of the bag and carefully fill the pancake mold (not too full). Let the pancake cook until you see a few bubbles burst. Gently remove the mold and then flip the pancake. Makes about 12 pancakes.
