You will need: mint chocolate chip ice cream, Oreos, green cupcake linerswooden spoonsGold and Green Dragees, Frosting or Whipped Cream

First, set the ice cream out to slightly melt. Arrange the cupcake liners in a muffin pan–the pan helps the cupcakes hold their shape. Crush the Oreos and place 2 Tablespoons of crushed Oreos into the bottom of each cupcake wrapper.

Scoop 2 Tablespoons of soft ice cream into each cupcake liner. Place the cupcakes in the freezer for at least 15 minutes, giving the ice cream time to re-harden. After the ice cream is firm, put another layer of 2 Tablespoons Oreos and 2 Tablespoons soft ice cream into the cupcakes. Keep cupcakes frozen until right before serving.

  2. What a fun idea. These would be great with any flavor but mint chip is perfect for St. Patty’s Day.
