Sweet, individual ice cream cupcakes are the perfect end to a St. Patrick’s Day celebration. Make these green cupcakes ahead of time and you’ll enjoy the day even more.

You will need: mint chocolate chip ice cream, Oreos, green cupcake liners, wooden spoons, Gold and Green Dragees, Frosting or Whipped Cream
First, set the ice cream out to slightly melt. Arrange the cupcake liners in a muffin pan–the pan helps the cupcakes hold their shape. Crush the Oreos and place 2 Tablespoons of crushed Oreos into the bottom of each cupcake wrapper.

Scoop 2 Tablespoons of soft ice cream into each cupcake liner. Place the cupcakes in the freezer for at least 15 minutes, giving the ice cream time to re-harden. After the ice cream is firm, put another layer of 2 Tablespoons Oreos and 2 Tablespoons soft ice cream into the cupcakes. Keep cupcakes frozen until right before serving.

When you are ready to serve, pull your cupcakes out of the freezer and top with frosting or whipped cream. Add your gold and green dagrees, and don’t forget to serve with a spoon!
