Halloween night can be a whirlwind of commotion with greeting trick or treaters, transforming your family into spooky costumes, and of course making dinner. Need some easy Halloween dinner ideas? Try a delicious and nutritious make-ahead meal: Ghostly Potato Soup.


Kids and adults alike will get a scare as they top their soup with grated cheese, sour cream and green onion served in this chilling Skeleton Hand Condiment Set courtesy of Pottery Barn.

INGREDIENTS:
4-6 potatoes, cubed
3-4 stalks celery, sliced
3-4 carrots, sliced
1 large onion, chopped
6-8 cups chicken or vegetable stock
12 oz. evaporated milk
salt + pepper to taste
TO MAKE: Add potatoes, celery, carrots, onion and chicken broth to slow cooker. Pour stock over vegetables. Cover and cook on low for 8 hours. Before serving, slowly stir in evaporated milk for a creamier taste and ghostly appearance.
