Every Christmas season my mom, sister and I make toffee to give out to friends and family. This year my mom dipped some of her famous toffee into crushed Oreo cookies. It was delicious! I can’t give out her super secret toffee recipe, but I did add toffee bits to my cookie pops and rolled them in crushed Oreos to see what would happen. Yum! Warning, these Oreo cookie truffle balls are very rich so you’ll only need one.
8 ounce package of cream cheese, softened
36 Oreo cookies, finely crushed in the blender — about 3 cups (plus about 20 more for coating the finished pops)
1 cup toffee bits
16 ounce bag semi-sweet chocolate chips, melted
Directions: Mix cream cheese, cookie crumbs, and toffee bits until blended. Shape into 48 1-inch balls (I used a My Little Cupcake mold to make mine round). Freeze for 10 minutes. Dip balls in melted chocolate then roll in crushed Oreos. Place in single layer in shallow wax or parchment paper-lined pan and refreeze to set chocolate. Enjoy!
