To celebrate the upcoming holidays and Christmas season, Chex cereal invited me and other local bloggers to an event at a nearby mall. We were asked to try out some new recipes and then had free reign to package them up as gifts. Well, you know I love to wrap things up–so I was in. The recipes that we made were so easy and yummy. You can see all of the Chex Recipes here. The Sugar Cookie recipe was my favorite and I’ve included the instructions below. If you need some last minute treat ideas you’ll love this one. You can make these with your kids to eat as a snack, give to teachers or hand out to neighbors. Merry Christmas!
Sugar Cookie Chex Party Mix
You will need:
6 cups Rice Chex® cereal
1/4 cup butter or margarine
1/4 cup granulated sugar
2 Tablespoons corn syrup
2 teaspoons pure vanilla
1/4 cup powdered sugar
1 ounce white baking chocolate or 1/4 cup vanilla milk chips
1 to 2 teaspoons colored edible glitter or sugar sprinkles
Directions: Line a cookie sheet with waxed paper or parchment and set aside.
Measure cereal into a large microwaveable bowl. In a 2-cup microwavable measuring cup, microwave butter uncovered on high for 30 seconds or until melted. Add sugar and corn syrup; microwave uncovered on high 30 seconds until mixture is heated and can be stirred smooth. Stir in vanilla. Pour mixture over cereal, stirring until evenly coated. Add white chocolate pieces and combine. Microwave uncovered on high 2 minutes, stirring after 1 minute.
Meanwhile, pour sugar into a large freezer zip-type bag. After removing the cooked Chex snack mix from the microwave, let stand in the bowl for 1 to 2 minutes to cool. Pour Chex mixture into bag and shake. Spread onto waxed paper or parchment lined cookie sheet and sprinkle with edible glitter or sugar sprinkles.
