It was love at first sight when I saw the <em><a href="http://www.cupcakecourier.com/">Cupcake Courier</a></em>. It holds 36 cupcakes and promises not to let the frosting get smashed. Plus, if you remove all of the cupcake trays you can even transport a cake. Not for sale on their website, I found a blue one on <em><a href="http://www.amazon.com/Cupcake-Courier-36-Cupcake-Plastic-Container/dp/B000XPQMXQ?ie=UTF8&amp;s=home-garden&amp;qid=1223858750&amp;sr=8-1">Amazon</a></em> and I was comforted knowing that it would be there, waiting, until I could justify buying it. But three weeks ago I checked again and ack, it wasn&#8217;t on there anymore. Unavailable. And sold out everywhere I turned. Unrequited love is so painful. I finally tracked it down on <em><a href="http://www1.bloomingdales.com/catalog/product/index.ognc?ID=118812">Bloomingdale&#8217;s</a></em> website only in pink. Good, because that&#8217;s the color I wanted anyway. And I thought I had it. The. Last. One. But no, I was wrong. They sent me an email apologizing for getting my hopes up because, unfortunately, it was out of stock. If you know me or if you&#8217;ve read my blog for more than one day, you KNOW that I&#8217;m always trying to make small improvements in my life to help save the planet. I cringe every time I go to pick up cupcakes for a party and I use another disposable box. A) It costs the bakery unnecessary money and B) I know the box is going to end up in the trash with all of the hustle and bustle of the party set up. But a little more internet sleuthing did produce one for me from <em><a href="http://www.preppyprints.com/cuco.html">Preppy Prints Baby Boutique</a></em>. In pink. And now I just have to wait for it to arrive. Ahh, love conquers all.</p>

			<content:encoded><![CDATA[<p><img src="http://www.sarahmagid.com/images/bookcover.jpg" alt="organic and chic cover" />Like many, I had long been awaiting the arrival of this cookbook: Organic and Chic. <em><a href="http://www.sarahmagid.com/">Sarah Magid&#8217;s</a></em> website is simply elegant. It&#8217;s full of beautiful cakes that conjure up memories of magical tea parties. Her style is unique and pleasing to the eye. It brings me hope in a world saturated with &#8220;perfect&#8221; fondant cakes. And I was dying to find out how she colored her bright and whimsical frosting organically. So&#8230; while on a date with my husband at a book store, I tracked down &#8220;Organic and Chic&#8221; and my husband bought it for me. This was the full price book store, and this book was nearly $30. As I looked through the book (at the bookstore and again at home and again while on vacation) I always had the same reaction. Disappointment. It seemed to me that she just took regular recipes and then changed the ingredients to organic. Anyone can take Aunt Sally&#8217;s famous chocolate cake recipe and change &#8220;milk&#8221; to &#8220;organic milk.&#8221; There is nothing special here. And not one vegan recipe. Plus she unapologetically uses artificial fluorescent food coloring in everything. I must admit that I hate artificial coloring and I&#8217;m always trying to find new ways to color frosting naturally, while not driving my bakers crazy. I was really hoping for some new insight into this area, because organic cakes would logically be colored naturally, right? Right? I hope it&#8217;s not lame to say how I honestly feel, because I normally applaud any step toward organic living, but I wouldn&#8217;t recommend buying this book.</p>

			<content:encoded><![CDATA[<p>A few weeks ago I attended the <em><a href="http://www.vikingcookingschool.com/">Viking Cooking School</a></em> for a class called &#8220;Cupcakes and Cake Balls.&#8221; It was fun. We were divided into 3 groups and each group made one flavor of cupcake and one flavor of cake ball, so a total of 6 different flavors.</p>
<p>I was in the red velvet group and we had some *ahem* setbacks with our cake balls. It was good practice though, and I think I know what to do differently next time. I had to use the picture of them all finished on the fancy platter so it would look like they kind of turned out. Although it didn&#8217;t work for my group, I thought the styrofoam was a good idea for holding your cake ball pops while they are cooling. <p>We also made cupcakes and I learned some fun techniques. I was in the caramel apple group. Our cupcakes were baked without a liner and while they were cooling in the cupcake pan we poked holes in the tops of the cupcakes and poured a caramel syrup over the tops that soaked in. We shaped almond paste into a carrot and an apple and used these to decorate the tops of the carribean carrot and the caramel apple. A whole clove was used for the apple&#8217;s stem. We also dipped the tops of the decadent chocolate fudge cupcakes into a melted chocolate mixture. I&#8217;d never done that with cupcakes and it was super easy and fun. I don&#8217;t think I&#8217;m authorized to post the recipes here, but I&#8217;m sure you could find similar cake recipes to use.<br />

The most interesting things I learned:</p>
<p>1. All of us at the class live at a high altitude, so the head chef told us to adjust for this by halving all leavening in our recipes (baking powder &#038; baking soda). I tried it later and it totally works.<br />
2. Not all pre-made fondants are the same. The head chef brought two brands and they were completely different textures.<br />
3. For fondant rolling, put cornstarch into a double layered cheesecloth square and tie it up with a rubber band. Just dab it onto to your work area so that your fondant doesn&#8217;t stick, kind of like flouring a surface to roll out sugar cookies.<br />
4. The head chef taught us how to make a frosting bag from parchment paper. I&#8217;m not going to attempt to describe it here, but it&#8217;s a great option when you don&#8217;t want to put melted chocolate in your good frosting bags and then waste all of the chocolate when you clean out your bags. She said we could put the parchment bags in the fridge with the unused chocolate and after it cools you can just peel off the parchment and reuse the chocolate.<br />
5. And last but not least, I learned that I would definitely do more baking if I had four chefs offering advice and cleaning up everything as I went along.<br />

I must admit that I&#8217;ve wanted this book for a while: <a href="http://www.amazon.com/Martha-Stewarts-Encyclopedia-Crafts-Instructions/dp/0307450570/ref=sr_1_1?ie=UTF8&amp;s=books&amp;qid=1251781431&amp;sr=1-1"><em>Martha Stewart&#8217;s Encyclopedia of Crafts</em></a>. I&#8217;ve seen it a few times in passing and refrained from buying it. But while on {another} date with my husband to the book store recently, I gave in. Usually for book reviews on this blog I have read through the entire book. Honestly, I haven&#8217;t read this whole thing&#8211;it&#8217;s huge, over 400 pages. But since purchasing it, I have flipped through it many times, always giddy with excitement.</p>
<p>If <a href="http://marthastewart.com/"><em>Martha Stewart</em></a> is going to do something, you know that she is going to do it well. And this book is no exception. For example, the entire book is organized in alphabetical order. Want to see half a dozen amazing wreaths? You know where to look. Interested in candlemaking? It&#8217;s in there too, under the letter &#8220;c.&#8221; Also, it includes Martha&#8217;s signature step-by-step instructions. And the photographs are gorgeous. They make me want to try everything. Really. It&#8217;s truly a delightful book and a great resource to have on hand. I know that I&#8217;ll be turning to it time and time again. I would definitely recommend this book.</p>

No, I have been slowly savoring it. The pictures make me want to snuggle down in some cosy handmade quilts and the projects remind me of my two kiddo days, when crafting filled my yellow kitchen and laundry included two fewer girls. In all honestly, I didn&#8217;t go to the bookstore to buy this book. I&#8217;d actually never heard of it. It caught my eye because it had a party looking banner on the cover and as I flipped through it, I loved the variety of crafts. I was a bit surprised, however, when I got it home. I guess I should have looked closer to where it says, &#8220;includes 30 sewing projects.&#8221; But I do like small sewing challenges and I can&#8217;t find fault with patterns that start out by saying &#8220;use what you have.&#8221; And there is a definitely a theme woven throughout this book that is right up my alley: don&#8217;t throw it away, just re-purpose it. Though I don&#8217;t have the slow paced life pictured within the pages, and I no longer sew with a nine month old on my lap, it doesn&#8217;t mean I can&#8217;t escape for a moment and remember when I did. *If you want you can check out Amanda Blake Soule on her blog <a href="http://www.soulemama.com/"><em>Soule Mama</em></a>.</p>

			<content:encoded><![CDATA[<p>I took my first cake decorating course about seven years ago with 3 really close and funny friends. We had so much fun and I really enjoyed the classes. From just this one course I learned enough to decorate my kids&#8217; cute birthday cakes for years. This month I decided to retake the classes. It was great as a refresher, but my instructor kept trying to convince me week after week that I would use the frosting rose the most in my cake decorating. Huh? Maybe if you frost cakes at a grocery store. And second she thought that as soon as we graduated from cake making class that we&#8217;d all be decorating entire cakes with a star tip. Is that even feasible?<br />

I&#8217;m not really this mean. I promise that I kept my mouth shut in class and only thought these things&#8211;never said them aloud. I&#8217;ll be starting the second course soon. With a different teacher at a different location. I can&#8217;t wait!</p>
